Boat Kitchen: Risotto with Porcini Mushrooms

One of the most important aspects of a boat vacation is enjoying delicious evening meals. Here is a recipe that you can easily prepare on your boat.

A delicious Italian dish: Risotto with Porcini Mushrooms

INGREDIENTS:

*2 cups Baldo rice

*1 large onion

*3 cloves of garlic

*Olive oil

*200g porcini mushrooms

*200g regular button mushrooms

*1 tablespoon butter

*2 tablespoons chopped chives

*Ground black pepper

*Salt

*Grated Parmesan cheese

*4 cups hot (beef or chicken) stock

*Fresh thyme to sprinkle on top when serving.

RECIPE:

First, chop the mushrooms and sauté them in olive oil. Without removing the mushrooms from the pan, pour 4 cups of hot chicken or beef stock over the sautéed mushrooms. Let it simmer for 10 minutes to soften and release its aroma, then strain the mushrooms and transfer them to a bowl. The remaining meat-flavored and mushroom-aromatic sautéed broth is very valuable for the flavor of our risotto.

Dice two medium-sized dry onions into cubes and place them in a non-stick, wide risotto pan. Begin sautéing with a little olive oil. Add the grated garlic, salt, and ground black pepper. Sauté until lightly browned. Don’t let it darken. The most important thing here is not to wash the Baldo rice. Risotto rice should not be al dente. It should be slightly creamy. For this reason, the starch in the rice should not be removed. Add the rice to the sautéed onions and sauté for a while. Then pour the flavorful stock we set aside earlier into the rice, starting with 2 cups. Then we add the mushrooms. We will stir with a wooden spoon. When it comes to a boil, we turn down the heat and let the liquid reduce slightly, then add the remaining 2 cups of hot stock again. The lid is not closed while the risotto is cooking. It is stirred occasionally. When the liquid has been absorbed, we add another cup of hot water. Taste occasionally to check if the rice has softened.

Note: Bite into the rice to check. It should be slightly al dente (or offer a little resistance to the teeth, but not be hard in the middle).

When it reaches the desired softness, add 1 tablespoon of butter and 2 tablespoons of chives and stir. Remove from heat, cover the pan with a paper towel, and close the lid. Let it rest for 10 minutes. When serving, sprinkle with Parmesan cheese and fresh thyme. Enjoy! 😋
